Cheese Ravioli with Fresh Basil and Tomatoes


  • 1 Pkg Drakes Cheese Ravioli
  • 2 LBS Garden Fresh Tomatoes-seeded and cut into ½” dice
  • 3 TBS Italian Balsamic Vinegar
  • 6 TBS Extra Virgin Olive Oil
  • ¼ Cup Fresh Basil-very thinly sliced (chiffonade)
  • 2 TBS Fresh Parsley-chopped
  • ¼ Cup Red Onion-diced
  • 8 oz Feta Cheese-crumbled
  • Salt and Pepper-to taste

Whisk vinegar, olive oil, basil, parsley, onion, sale and pepper until blended.  Add tomatoes and marinate at room temperature for at least an hour.  Cook ravioli per package instructions, drain and lightly coat with olive oil. Cover with freshly made sauce. Enjoy!!
