Drake’s manufactures a traditional Italian fresh pasta which is defined by the process and ingredients. We use 100% Durum Wheat Flour along with fresh whole eggs (pasta all’uovo) and filtered water. These ingredients are gently mixed and then pass through a kneading machine which forms the dough. The final process is a pass through several sets of rollers which compact the dough and form it into a sheet. This is much different than mass produced extruded pasta and the result is a slightly firm texture, no gummy mouth feel, and a bright golden color. We manufacture several cuts and flavors that are all natural and achieve their different colors from real vegetables and nothing artificial.
